Day 335 Easy Whole Wheat Rolls


Easy Whole Wheat Rolls

2 Packages Yeast
2 1/4 Cups Warm Water
1/4 Cup Shortening
2 Egg Equivalent*
1/2 Cup Sugar
2 Teaspoons Salt
3 Cups Whole Wheat Flour
2 1/2 Cups All Purpose Flour
1/4 Cup Butterless Butter, melted (Day 328)

*2 Tablespoons Ground Flaxseed, 2 Teaspoons Baking Powder, 2 Teaspoons Potato Starch, 2 Tablespoons Oil, 6 Tablespoons Water - mixed together

1.  Dissolve yeast in the water in the bowl of a stand mixer.  Let stand for 5 minutes.  Add shortening, egg equivalent, sugar and salt.  Beat at medium speed with a dough hook.  Add flour a 1/2 Cup at a time until dough forms a ball.

2.  Place dough in a well greased bowl.  Cover and let rise in a warm place for 1 hour.

3.  Punch dough down and divide in fourths. Divide each fourth into 12 strips. Roll each strip between your palms to make a ball.  Place 2 inches apart on baking sheets lined with parchment paper.

4.  Cover and let rise for 30 minutes. Brush with melted butter.  Bake at 375 F for 15 - 20 minutes.

Day 334 Applesauce Salad


Applesauce Salad

2 Packages Vegan Raspberry Gelatin*
2 1/4 Cups Boiling Water
16 Ounces Pear Applesauce (Day 333)
1 Cup Cranberry Juice Cocktail
3 Tablespoons Lemon Juice

Dissolve gelatin in boiling water in a large bowl.  Stir in applesauce, lemon juice, and cranberry juice. Mix well.  Pour into an oiled bundt cake mold.  Chill until firm. Unmold onto a platter.

*  Mine was not as solid as I would like.  You might consider using 3 packages of gelatin.

Goes well with sweet potatoes.

Day 333 Pear-Apple Sauce


Pear-Apple Sauce

4 Apples, peeled and chopped
3 Pears, peeled and chopped
1 Tablespoon Lemon Juice
1/4 Teaspoon Ground Cinnamon
1/3 Teaspoon Ground Cloves
1/8 Teaspoon Nutmeg
Ingredients

  Bring all ingredients to a boil in a saucepan over medium heat.  Reduce heat, and simmer until the fruit breaks down, 20 - 30 minutes.  Transfer to jars and refrigerate.

Day 332 Marinated Vegetables


Marinated Vegetables

1/2 Cup Canola Oil
1 Cup Apple Cider Vinegar
1 Tablespoon Sugar
1/3 Cup Dill, chopped
1 Teaspoon Salt
1 Teaspoon Garlic Powder
1 Teaspoon Pepper
2 Cups Broccoli, cut into small flowerets
2 Cups Cauliflower, cut into small flowerets
3 Yellow Squash, chopped
3 Carrots, sliced
6 Mushrooms, sliced

1.  Combine the oil, vinegar, sugar, dill, salt, garlic powder and pepper.  Whisk well to combine.

2.  Combine the vegetables in a large container with a cover.  Pour the dressing over the vegetables.  Mix well.

3.  Refrigerate for 24 hours.  Occasionally, shake the container or mix the vegetables.

Goes well with cornbread.

Day 331 Cornbread


Cornbread

2 Cups Cornmeal
1 Tablespoon Sugar
1 Teaspoon Salt
2 Tablespoons Ground Flaxseed
2 Teaspoons Baking Powder
2 Teaspoons Potato Starch
2 Tablespoons Canola Oil
6 Tablespoons Water
12 Ounces Almond Cream (Day
1/4 Canola Oil

1.  Mix the flaxseed, baking powder, starch, oil and water in a bowl. Mix well. This makes the equivalent of 2 eggs.
Batter ready to bake

2.  Preheat oven to 350 F and grease a large skillet.

3.  Mix all the ingredients together.  Pour into skillet and bake for 35 - 40 minutes.  Cornbread should brown on top.

Goes well with  some of the Herb Buttery Sauce (Day 330)

Day 330 Herb Buttery Sauce


Herb Buttery Sauce

1/2 Cup Butterless Butter (Day 328)
1/4 Cup Lemon Juice
2 Tablespoons Soy Sauce
1 Green Onion, minced
1 Sprig Sage, chopped
Several Sprigs Thyme, leaves removed
1 Teaspoon Dried Marjoram
1/2 Teaspoon Salt
1/4 Teaspoon Pepper

Melt the butter in a small saucepan.  Add the remaining ingredients and bring to a boil.  Remove from heat.

Use to seasoning anything that is being roasted in the oven.

Day 329 Pasta with Pesto Veggies


Pasta with Pesto Veggies

8 Ounces Pasta, cooked and drained
1/4 Cup Veggie Stock
1 Carrot, peeled and chopped
1 Parsnip, peeled and chopped
2 Celery Stalks, chopped
1 Cup Green Beans, chopped
1/2 Onion, Chopped
1/4 Cup Pesto Sauce
2 Tablespoons Olive Oil
2 Tablespoons Sunflower Seeds
Nutritional Yeast for garnish

1. Heat stock in a skillet.  Add the veggies and cook until they are soft.  Mix in the pesto and olive oil.  Continue cooking for 5 minutes.  Mix in the seeds.

2.  Add the veggies to the pasta and mix well so that the sauce covers all of the pasta.  Serve with nutritional yeast sprinkled on top.

Day 328 Butterless Butter


Butterless Butter

1 1/2 Cups Softened Refined Coconut Oil, not extra virgin oil
1/2 Cup Soy Milk
1/4 Cup Canola Oil
1/2 Teaspoon Sea Salt

Place coconut oil and salt in a blender.  Mix the milk and canola oil in a measuring cup.  Process the coconut oil till smooth, slowly pour in the milk mixture.  Process for 1 minute or until smooth.  Pour into a container and freeze until hardened.  Transfer to the refrigerator.

Use as a spread or with anything that you want to be a little creamier than just regular oil.

Day 327 Braided Bread


Braided Bread

2 3/4 Cups All Purpose Flour
2 1/4 Teaspoons Yeast (1 Package)
3/4 Cups Water
3 Tablespoons Earth Balance
2 Tablespoons Sugar
1/4 Teaspoon Salt
1 Tablespoon Ground Flaxseed
1 Teaspoon Baking Powder
1 Teaspoon Potato Starch
1 Tablespoon Olive Oil
3 Tablespoons Water

1.  In the bowl of a stand mixer with a dough hook, combine 1 cup of flour and yeast.  Heat and stir water, Earth Balance, sugar and salt.  Make the sure the water is warm, not hot before adding to the flour.  Mix the remaining ingredients in another small bowl.

2.  Add the water mixture to the flour and beginning stirring.  Add the flax seed mixture.  Beat on stir for 30 seconds then increase the speed to 4.  Add the remaining flour a 1/2 cup at a time.  Knead until the dough makes a bowl.  If the dough is too wet, add a little more flour.

3.  Oil the bowl, cover and let the dough rise for 1 hour.

4.  Punch the dough down and divide into 3 pieces.  Roll each piece into a 12 -14 inch log.  In a greased baking pan, braid the dough.  Cover and let rise for 1 hour.  Brush the loaf with water.

5.  Bake at 375 F for 25 minutes or until golden brown.

Day 326 Hot Chocolate


Hot Chocolate

1/3 Cup Sugar
1/4 Cup Water
2 Ounces Unsweetened Chocolate, cut up
2 1/2 Cups Almond Milk (Day 312)

1.  In a glass dish, combine sugar, water and chocolate.  Microwave 2 minutes until chocolate is melted.  Stir every 30 seconds.

2.  Blend in milk. Microwave 9 minutes, stirring every 3 minutes.

Makes 2 servings

Day 325 Cheesy Soup with Broccoli


Cheesy Soup with Broccoli

2 Tablespoons Earth Balance
1/2 Pound Vegan Kielbasa. cubed
1 Onion, chopped
1/2 Teaspoon Caraway Seed
Pepper to taste
1 Bay Leaf
28 Ounces Veggie Broth
1 Russet Potato, peeled and diced
1 1/2 Cup Broccoli, chopped
1 1/2 Cups Cauliflower, chopped
1/4 Cup Soy Milk
1 1/2 Cups Daiya Cheddar, shredded
Ingredients

1. In a soup pot, place Earth Balance, sausage, onion, caraway seed, pepper and bay leaf.  Cook until sausage is browned and onion is tender.

2.  Add stock, potatoes, broccoli and cauliflower. Cook until veggies are soft.
Before adding the cheese

3.  Stir in milk and cheese and cook until cheese is melted.  Discard bay leaf.

Day 324 Minestrone Soup


Minestrone Soup

1 Pound Seitan, cubed
5 Cups Bean Stock
1 Onion, chopped
1 Clove Garlic, minced
1 Tablespoon Pesto
1/4 Teaspoon Pepper
1 Can Diced Tomatoes
2 Bay Leaves
2 Cups Pasta, uncooked
1 Zucchini, chopped
1 Cup Cabbage, shredded
2 Cups Green Beans, cut into 1 inch slices
1/2 Cup Celery, chopped
2 Tablespoons Parsley, chopped
1/2 Teaspoon Salt
2 Carrots, peeled and chopped
1 Can Navy Beans
1/2 Cup Red Wine
1/2 Cups Water
Ingredients

  In a large stew pot, place seitan, stock, onion, bay leaves and garlic. Cook 20 minutes.  Add pepper, pesto, tomatoes, pasta, zucchini, cabbage, celery, salt and carrots.  Cook until pasta is soft.  Add the remaining ingredients and cook 15 minutes.  Remove bay leaves and serve.

Goes well with salad.

Sugar Glazed Walnuts

1/2 Cup Earth Balance, melted
1 Cup Brown Sugar
1 Teaspoon Cinnamon
4 Cups Walnut Pieces
Ingredients

In a glass dish, combine Earth Balance, sugar and cinnamon.  Microwave 2 minutes, stirring after 1 minute.  Add the nuts and mix to coat. Microwave for 3 minutes.  Spread on parchment paper and cool.  Store in an airtight container.
Glaze

Goes well with fruit salad.

Day 322 BBQ Unribs


BBQ Unribs

1/4 Cup Soy Sauce
3 Tablespoons Nutritional Yeast
2 Tablespoons Smooth Peanut Butter
2 Tablespoons Tomato Paste
1 Tablespoon Miso
4 -5 Cloves Garlic
1 1/4 Cups Water
2 1/2 Cups Vital Wheat Gluten
Oil for cooking
Barbecue Sauce (Day 321)
1 Onion, chopped
2 Cups Hot water
Ingredients

1.  In a food processor combine soy sauce, yeast, peanut butter, tomato paste, miso, garlic and water.  Mix well.  With the motor running, add the gluten and mix until a ball forms.
Ribs

2.  Roll the dough into 4 logs.  Cut 4 ribs from each log. Heat a skillet over medium heat with a few tablespoons of oil.  Cook the ribs until they are browned on both sides.
Searing the ribs

3.  Preheat the oven to 375 F.  Layer the ribs in a lasagna pan.  Top with the onion.  Mix 11/2 Cups of barbecue sauce with the water.  Pour over the ribs. Bake for 90 minutes. Serve with extra sauce.

Day 321 Barbecue Sauce



Barbecue Sauce

2 Tablespoons Earth Balance
1 Small Onion, finely chopped
1 Cup Ketchup (Day 303)
1/3 Cup White Vinegar
4 Tablespoons Worcestershire Sauce (Day 297)
1/2 Cup Brown Sugar
1/8 Teaspoon Garlic Powder
1/4 Teaspoon Chinese 10 Spice Mix
2 Teaspoons Pepper
1 Tablespoon Chili Powder

In a 2 quart glass dish, place Earth Balance and onion.  Microwave 3 minutes.  Add remaining ingredients. Microwave 5 minutes.  Stir and continuing microwaving for 6 minutes until sauce is thickened.  Stir after 3 minutes.

Makes 2 Cups
