Day 176 Strawberry Banana Oatmeal


Strawberry Banana Oatmeal

1 Cup Water
1/2 Cup Rolled Oats
1 Teaspoon Cinnamon
1 Tablespoon Brown Sugar
1 Cup Strawberries, sliced
1 Banana, sliced
Ingredients

Bring water to a boil and add oats and cinnamon.  Cook until thickened.  Add the brown sugar.  Mix and remove from heat.  Pour in a bowl and add the fruit.

Day 175 Papaya Strawberry Salad


Papaya Strawberry Salad

1/4 Papaya, cubed
10 Strawberries, sliced
1/2 Cup Raspberries
1/2 Cup Blueberries
1 Banana, sliced
Juice of 1 Lemon
2 Tablespoons Coconut (you can use the leftover pulp from the Coconut Milk Day 137)
2 Tablespoons Raw Sunflower Seeds
Salad Ingredients

Gently mix all ingredients together.  Drizzle lemon juice over the salad.

Day 174 Rice Noodles with Tofu, Water Chestnuts and Herbs


Rice Noodles with Tofu, Water Chestnuts and Herbs

Marinade
Juice of 2 Limes
1/4 Cup Soy Sauce
2 Tablespoons Agave Nectar
1 Clove Garlic, minced
1/2 Teaspoon Chili Powder
1/4 Teaspoon Black Pepper, ground

Noodle Dish
4 Ounces Rice Noodles
8 Ounces Extra Firm Tofu, cubed
1 1/2 Cups Purple Cabbage, thinly sliced
8 Ounces Diced Water Chestnuts
1 Cup Cucumber, diced
1/2 Cup White Mushrooms, thinly sliced
1 Sprig Oregano
3/4 Cup Cilantro, chopped
1 Sprig Basil, chopped
1/2 Cup Roasted Peanuts
Ingredients

1.  In a small bowl, whisk together all the dressing ingredients.  Pour into skillet and add tofu.  Let the tofu marinade while prepping the other ingredients.

2.  Place the noodles in a medium bowl.  Cover with boiling water and let stand until ready to use.  It will take 5 minutes for the noodles to become soft.

3.  Heat the tofu in the skillet.  Add the cabbage, peanuts and mushrooms.  Cook until the cabbage is soft. Drain the noodles and add to the skillet.  Heat for a few minutes.  Turn off the heat and add the cucumber and herbs.

Day 173 Strawberry Spinach Smoothie


Strawberry Spinach Smoothie

1 Cup Frozen Strawberries
1 Handful Fresh Spinach
1 Cup Cashew Milk (Day 155)
1 Tablespoon Sliced Almonds
1/4 Kidney Beans

Blend until Smooth.

Day 172 Ale and Brown Sugar Mustard


Ale and Brown Sugar Mustard

1/2 Cup Brown Mustard Seeds
1/2 Cup Ale
1/2 Water
1/4 Cup Apple Cider Vinegar
3 Tablespoons Brown Sugar
1 Teaspoon Salt
I used the Leffe Belgium Blonde Ale

Combine all ingredients in a jar.  Let it macerate for 2 days.  Place in a blender and puree until smoother.  Return to jar and let mellow at room temperature for 4 weeks.  Transfer to a clean jar.  The mustard will last in the refrigerator for 1 year.

Day 171 Picnic Macaroni Salad


Picnic Macaroni Salad

4 Cups Macaroni Pasta, cooked
1 Cup Cherry Tomatoes, halved
1 Cup Sugar Snap Peas, stringed and sliced
1 Cup Black Beans
Fresh Herbs
1/4 - 1/2 Cup Ranch Dressing (Day 112)

Mix everything together for a quick to go meal.  Makes 2 servings.

Pairs well with rose wine.

Mediterranean Wrap Sandwich

8 Ounces Vegan Cream Cheese
Kalamata Olives
3 Red Bell Peppers, roasted and skinned
Fresh Oregano
Package Small Whole Wheat Tortillas
Tofurky Deli Slices
Romaine Leaves
Ingredients

Spread the cream cheese on a tortilla. Layer the tortilla with the romaine, deli slices, and a half pepper.  Sprinkle on the oregano and a few olives.  Roll the tortilla with the toppings.

Day 169 Fabulous Fajitas


Fabulous Fajitas

1 Package Beyond Chicken, grilled style
1 Garlic Clove, minced
1 Tablespoon Olive Oil
1 Green Pepper, cut in strips
1 Onion, thinly sliced
1 Tablespoon Mexican Seasoning
1 Tablespoon Lime Juice
Large Whole Wheat Tortillas
Shredded Daiya Pepper Jack
1 Tomato, chopped
Salsa
Ingredients

1.  Saute onion and garlic in oil.  Add pepper and chicken strips.  Cook till heated through.  Flavor with the seasoning and lime juice.  Mix in the tomato.

2.  Place tortillas on a plate and microwave one minute.

3.  Assemble Fajitas by placing veggie and chicken mix on the warmed tortillas, then spread on cheese to taste, followed by the salsa.

Day 168 Country Buns


Country Buns

1 Tablespoon Dry Yeast
1 Teaspoon Sugar
1 1/4 Cup Warm Water
3 Cups White Flour
1 Cup Whole Wheat Flour
2 Teaspoons Salt
2 Tablespoons Olive Oil
Cornmeal
Ingredients

1. Combine yeast, sugar and water in the bowl of a stand mixer.  Let sit till yeast is dissolved and foamy.
Read to rise

2.  Add 1 cup of flour and the salt to the liquid.  With a dough hook, begin mixing the bread.  Continue add flour, a half cup at a time.  After all the flour has been added, pour in the olive oil.  Let the machine knead the bread until it comes together in a ball.

3.  Cover the dough and let rise for 45 minutes.  Punch dough down and place on a floured surface.  Separate the dough into 10 -12 pieces depending on the size buns you want.  Roll the pieces into a ball, then smash with the palm of your hand into a disk.

4.  Sprinkle cornmeal on baking sheet.  Press buns into the cornmeal.  Let rise in a warm place for 45 minutes.

5.  Bake at 425F for 15 minutes.  Reduce heat to 375F and continue cooking for 5  to 10 minutes.  Buns should be lightly browned and hollow when tapped.

5 Ounces Vanilla Yogurt
1 Handful Spinach
1/2 Cup Frozen Blueberries
1/2 Cup Frozen Mango
1 Kiwi
1/4 Cup Kidney Beans
1/4 Walnuts
1 Teaspoon Ground Flaxseeds
3/4 Cup Water
Ingredients

Blend all ingredients in a high powered blender.

Day 166 Collard Wrap


Collard Wrap

1 Bunch Collard Greens
Hummus
Cooked Brown Rice
Cooked Red Lentils
Fresh Herbs
Steamed collard leaf

1.  Use one large collard leaf per wrap.  Steam the leaves in a large skillet or in the microwave.  Spread 1/4 cup of hummus on each leaf.

2.  Mix the rice, lentils and herbs.  Use 1 cup of the mix per leaf, and spread on the leaf.

3.  Roll the leaf over the topping with the ends tucked in.

Goes well with Jalapeno Cornbread

Day 165 Banana Blueberry Smoothie


Banana Blueberry Smoothie

3 Frozen Banana, sliced
1 Cup Frozen Blueberries
1 Handful Fresh Spinach
1/4 Cup Cocoa
1 Teaspoon Cinnamon
1 Tablespoon Maple Syrup
1 Cup Coconut Water

Blend all ingredients together.  Makes 1 large or 2 medium smoothies.

Day 164 Jalapeno Cornbread


Jalapeno Cornbread

2 Tablespoons and 1 Teaspoon Olive Oil
2 Jalapenos, seeded and minced
1 Red Bell Pepper, seeded and minced
1 Cup Yellow Cornmeal
2 Teaspoons Brown Sugar
3/4 Teaspoons Salt
1 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/4 Teaspoon Pepper
1/2 Cup Boiling Water
3/4 Cup Cashew Milk (Day 155)
1/8 Teaspoon Hot Sauce
Flax Egg Whites, equivalent in mass to 1 egg (Day 156)
1/2 Cup Dayia Cheddar, shredded
Ingredients

1.  Heat oven to 450F.  Heat 2 tablespoons oil in an oven safe skillet.  Add the peppers.  Cook 5 minutes and set aside.  Add 1 teaspoon of oil to the skillet and sit in the oven,

2. Measure 1/3 cup of cornmeal in a medium bowl.  In a large bowl, add all of the dry ingredients.  Whisk the boiling water into the 1/3 cup of cornmeal.  Whisk in the milk, hot sauce and flax egg.  Add the wet ingredients to the dry ingredients and mix well.  Stir in the peppers and cheese.

3.  Pour the batter in the hot skillet and cook 15 minutes.  Check to make sure it is done in the center, if not cook up to 10 more minutes.  Let cool 5 minutes before cutting.

Goes well with Kale Salad.

Day 163 Oil Free Kale Salad


Oil Free Kale Salad

1 Bunch Kale, destemmed and sliced
1 Avocado
1 Carrot, peeled and julienned
1 Tomato, chopped
1 White Onion, chopped
1 Lemon, juiced
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Tablespoon Sesame Seeds
1 Tablespoon Sunflower Seeds
Kale and carrots

1.  Put kale and carrots in a large bowl.
Avocado dressing

2. Scoop the avocado into a small bowl.  Add the lemon juice and mash together.  Add the pepper and garlic powder and mix.

3.  Pour the avocado mix on top of the kale.  Using your hands, massage the dressing into the leaves.

4.  Mix in the onion, tomato, and seeds.

Goes well with quinoa.

Pairs well with an Italian White Wine,

Lemon Ginger Smoothie

1 Lemon, peeled and seeded
2 Inch Piece of Ginger, peeled and chopped
2 Frozen Bananas, sliced
2 Cups Water
1 Cup Ice

Blend all ingredients together in a high powered blender.

1/2 Cup Frozen Pineapple

Add all ingredients to a blender and process till smooth.  If the mixture is too thick, add more water.

Flesh of 2 Avocados
1 Cup Shelled Edamame. thawed if frozen
5 Tablespoons Lime Juice
3 Garlic Cloves, peeled

In a food processor, emulsify all of the ingredients until silky smooth.

Day 158 Cheesy Broccoli Baked Potato


Cheesy Broccoli Baked Potato

4 Large Potatoes, baked or microwaved
6 Cups Broccoli, cut in bite sized pieces

Cheesy Mix
1 Cup Raw Cashews
1 1/4 Cups Nutritional Yeast
1/2 Rolled Oats
1/4 Cup Arrowroot
1 Tablespoon Salt
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1/2 Teaspoon Ground Turmeric
Dry cheesy mix

1. Place all of the ingredients for the cheesy mix in a food processor.  Blend until a fine powder.

2.  Steam the broccoli until bright green and tender.

3.  Place 1 cup of the cheesy mix with 2 cups of water in a small pot. (If making more or less, it is a 2:1 ratio, water to mix).  Heat to medium.  Whisk often, cooking until thickened.

4.  To assemble, place the bake potatoes on plates and mash or crush.  Top with broccoli then pour the sauce over.

Day 157 A Really Good Burger


A Really Good Burger

2 Pounds White or Cremini Mushrooms, quartered
2 Large Onions, roughly chopped
1 Cup Parsley, chopped
Large Sprig Fresh Basil, sliced
1 Tablespoon Fresh Oregano
1 Teaspoon Fresh Thyme
4 Cups Cooked Brown Rice
1/2 Cup Tomato Paste
1/3 Cup Soy Sauce
3 Tablespoons Miso
1/4 Teaspoon Ground Allspice
1 Tablespoon Salt
3 Cups Vital Wheat Gluten

Ingredients including fresh herbs from the garden
1. Pulse the mushrooms, onions, and herbs in batches in a food processor until minced but not mushy. Transfer to a large bowl and mix in the rice, tomato paste, soy sauce, miso, allspice and salt.  When everything is incorporated add the wheat gluten and mix well.

2. Make patties as large or small as you like.  You can fry the in the skillet with a little bit of Earth Balance or bake in the oven at 350F for 30 minutes.

3.  These freeze well when baked first.  Just pull out of the freezer and reheat in a skillet.

Goes well with Pumpkin Rolls, Dijon Mustard (Day 138), Oil Free Eggless Mayonnaise (Day 111), lettuce and tomato slices.
