New Stuff

Oatmeal
A trip to the grocery store means lots of new recipes to try.  I started with a crock pot oatmeal.  This is another way to cook the steel cut oats without a lot of work.  Before bedtime, the oats, frozen mixed vegetables, water, cinnamon, vanilla cashew milk and nutmeg are added to the pot.  In the morning, breakfast is ready.  The cashew milk was a new item, I had been wondering when I would see this product.  I have not tried alone, but  it worked well in the oatmeal.
Later in the morning I made a drink from soaked dates, maca powder, cinnamon, ice and water combined in the blender.  It tasted like what I would imagine date milk tasting.
Lunch was a large salad of spinach, very strong purple onion, soaked almonds, red pepper and mushrooms.  The dressing was made with lemon juice, dijon mustard, maple syrup, olive oil, garlic powder, pepper and hemp seeds.

For an afternoon snack, I made some raw cookie dough balls.  Walnuts, quinoa flakes, vanilla, and dates were combined in the food processor. Chopped chocolate chips were then mixed in.  The dough was rolled into balls and chilled in the refrigerator.

For dinner we had a Pesto Pasta.  The pesto was made with basil, garlic, cannellini beans, pine nuts, nutritional yeast, lemon and olive oil.  The pesto was served over brown rice spaghetti.  The beans made the pesto much richer than regular pesto.

A side salad rounded off the meal.  I mashed avocado and lemon juice together and topped spring mix with it.

Addicted to Results 5/11 and 5/12

5/11

Started the day with a brunch at Teavolve.  It was a beautiful day and we walked to Harbor East with the dogs. Teavolve brunches always start with a  pitcher of red sangria.  For the meal I had the Tomato Bisque with pita slices.
That followed with a green salad made is a green tea vinaigrette.  Not the best dressing I have had. The salad also had goat cheese that I had to pick out.  The salad included tofu, almonds and dried cranberries.
We did not do a special meal for our anniversary because we ate out yesterday.  We finished the brown rice with pesto, tomatoes and pine nuts.  We did have a special bottle of wine.  We try to find a bottle from 1985 which is the year we got married.  This one is a Gruner Veltliner from Leth.

Finished everything up with one of the cupcakes.  I had the pistachio icing and white cake. (the green one.) Not nearly as sweet of the one last night which I think makes it better.

Last day of the challenge. My body is very fatigued and I am looking forward to several days away from the gym. For breakfast I had a chocolate chia granola with pecans and raisins and rice milk.

For a snack, I spread pesto and ranch dressing on a slice of olive bread.
Lunch was brown rice with the last of the tomato and corn mix and some pesto for flavor.
Cider
Today was grocery day, but I did not have time to make anything and spin class and Monday night is 24 night.  We had a quick bit at Of Love and Regret.  I started with a ginger apple cider.
I had my standby of the vegetarian Bahn Mi burrito and fries.  Later in the evening I had the last cupcake. This one was cookies and cream frosting on a chocolate cake.  This was super sweet and I cut off half the icing.

Addicted to Results 5/9 and 5/10

Starting the day with oatmeal. These are the round whole oats. I soak them overnight so that they cook quick in the morning.  I added dates, pecans and apple butter.
Green pea hummus on a piece of whole wheat bread for a  snack.
Lunch was a mix of leftover stuff.  Some garlic lemon asparagus, tofu stir fry and tomato corn mix.
A blurry picture of dinner.  I was going crazy trying to figure out why the camera would not focus.  I learned the next day that junk was on the camera lens.  I cleaned it off and the later pics are better.  This is brown rice with sauteed spinach, onion, cherry tomatoes and carrots.  I toasted some pine nuts then added a pesto I made with  basil, parsley and cilantro.  There is some nutritional yeast on the top.

More oatmeal for breakfast.  These are regular oats with raisins, pecans, carob and apple butter.

We had a late lunch at my favorite place, The Great Sage. We sat out side under an umbrella during a rain storm.  Very nice an peaceful. I started with a cocktail called autumn harvest made with vodka, grapefruit juice and grenadine.

We split a appetizer plate of hummus, tapenade, and tabbouleh.
The main course was a Thai noodles with peanut sauce  and sweet potatoes and cabbage,
Dessert was cherry cobbler.

Because lunch was late, we really did not have dinner.  We had some Champagne with a cupcake.  The chocolate frosting was a sugar bomb. The cupcakes were from the Roots grocery in Clarksville, MD
Before bed, I had some olive bread with the last of the tomatilla avocado salsa.

Addicted to Results 5/7 and 5/8

Going all out lunch at breakfast - a vegan hot dog on a whole wheat bun the tomatilla avocado salsa and ketchup. I also had some tea and fruit plate at Atwater's.
Lunch was the Tofu Stir Fry, this time served over some barley that I had frozen a few weeks ago.
Dinner was some of the barley and the last of the tomato sauce that I had used with the eggplant sandwiches. I had tomato cucumber salad on the side.  The product below was called Citrus Vegan Spareribs.  They were made with a mix of soy protein and wheat gluten.  They would not remind you of spareribs in any way -maybe more like a type of chicken.  The nuggets were very chew and not very palatable.

Breakfast was my last orange. I ate it before going to gym.  When I got back, it was the last the vegan hot dogs.

For lunch, I mixed some leftovers together - the last of the sundried tomato risotto, some sauteed onions, and the corn and tomato mix.  They worked well together.
Veggie Pizza
We went to the Can Company for dinner.  On the 2nd Thursday of each month during the spring and summer, they have a band playing.  Last night was the Kelly Bell Band.  We started with a bottle of cremant and a veggie pizza at Chesapeake Wine Company.  No cheese on my half.
Tangerine Sorbet
I have not gone to Cold Stone Creamery in years because of my lactose intolerance.  On a whim I decided to check and see if that had sorbet or non dairy milk ice cream.  They had one sorbet, but it was a great flavor - tangerine.  Mine was mixed with black cherries and pecans.  We also made our way through a bag of potato chips.

Addicted to Results 5/4




The next couple of days are going to be a little be hectic, so I just listing my food the Addicted to Results challenge. Breakfast was the last of the Apple Banana Pancakes with pecans and maple syrup.  For a snack, I had a Banana Muffin right before leaving to see Richard II at the movie theater.  


Landmark carries vegan desserts including this chocolate chip cookie that I split with Tommy.  I also brought in one of the granola bars from Atwater's to go with the green tea sold at the theater.  After the movie, we went to Wit and Wisdom for a mid day meal.  I had 2 glasses of wine and a Falafal Burger with fries.  This was a late lunch.  Later in the evening I had some of Shepherd's Pie and a cracker with some green pea hummus.

Addicted to Results 5/3


For breakfast I thought I would change up by pancakes a little bit.  Instead of syrup I used apple butter as a topping.

I was at the gym from 8:30 to 12:30 today, so I brought a lara bar as a snack.
Lunch was a repeat of the Eggplant Tomato Sauce Sandwich with the Cabbage Slaw on the side.  The weather was wonderful and during the mid afternoon we walked up the Annabell Lee's to sit outside and enjoy the weather.  I had a cocktail and we split a bottle of wine.  We also split a appetizer of polenta with a corn sauce.
Next came an order of very spicy sweet potato fries with a brown sugar sauce. This was early in the evening, so we skipped having a regular dinner.  Later in the evening I had a small bowl of the Shepherd's Pie.
