Addicted to Results 4/17

Muesli preparing to soak overnight

Workout - 30 minutes of yoga stretches and a Tabata (jump squats, lunges, mountain climbers, burpees)
30 minute run
1 hour walk
Muesli with apple

Breakfast - Muesli - oats, raisins, walnuts and cinnamon were soaked in a mix of rice milk and apple juice concentrate overnight.  By morning the oats were soft and an apple was added the cereal.

Snack - Banana
Multigrain rolls and baguette fresh from the oven

Lunch - Sloppy Joes on Multi grain buns - For the joes, onion, garlic and tempeh were sauteed, then a sauce was a made from tamari, homemade ketchup, mustard, apple cider vinegar and agave nectar.  The buns were a multi grain using white, whole wheat, and buckwheat flours and cornmeal.  I used ground flaxseeds, water, oil, and potato starch in place of the eggs.  The texture came out perfect.  No one would miss the eggs.  I added some carrot and celery sticks to round out the meal.

Tofu Mayonnaise

Dinner - Bean Burrito made from pinto beans, corn salsa, red bell pepper, tomato, carrot, brown rice, tofu mayo, chili powder, garlic powder, cumin and oregano.  I made a fresh batch of tofu mayo.  This version did not use the rice vinegar and was creamier than the earlier version I made.  The burrito was served on whole wheat tortilla.
