Day 283 Blueberry Oat Bread


Blueberry Oat Bread

2 Cups All Purpose Flour
1 Cup Rolled Oats
1 Cup Sugar
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1/4 Teaspoon Allspice
3/4 Cup Almond Milk
1/2 Cup Earth Balance, melted
Peel of 1 Lemon, grated
Equivalent 2 eggs*
1 1/4 Cups Fresh Blueberries

*2 Tablespoons Ground Flaxseeds, 2 Teaspoons Baking Powder, 2 Teaspoons Potato Starch, 2 Tablespoons Olive Oil, 6 Tablespoons Water - mixed together
Dry ingredients

1.  Combine dry ingredients in bowl of stand mixer with the flat beat at Stir speed for 20 seconds.  Add milk, lemon peel, Earth Balance, and egg equivalent.  Combine at Stir speed until blended.  With spoon, gently stir in blueberries.
Ready to bake

2.  Spoon batter into 9 X 5 X 3 inch pan that has been greased on the bottom only.  Bake at 350 F for 55 to 65 minutes and a toothpick inserted in the center comes out clean.  Cool in pan 10 minutes,  Remove from pan and cool on a wire rack.

Day 241 Raisin Oatmeal


Raisin Oatmeal

The best oats are the whole steel cut oat groats.  But they can take a long time to cook.  To make it easier in the morning, put all the ingredients in a crock pot at bedtime.

2 Cups Water
2/3 Cup Steel Cut Oats
2/3 Cup Raisins
Ready to slow cook
This give you a creamy oatmeal in the morning.

Makes 3 Servings

Day 229 Triple Blueberry Oatmeal


Triple Blueberry Oatmeal

2 Cups Water
1 Cup Old Fashioned Oats
1/4 Cup Dried Blueberries
1/2 Cup Frozen Blueberries
1 Tablespoon Agave Nectar
1/2 Cup Fresh Blueberries

In a saucepan, bring water to a boil.  Add the oats and dried blueberries.  Reduce heat to a simmer.  Cook for 5 minutes and add the frozen blueberries.  Cook until the oatmeal is creamy.  Add the agave nectar and mix well.  Top with the fresh blueberries.

Makes 2 Servings

Day 196 Oatmeal Smoothie


Oatmeal Smoothie

1/2 Cup Lite Coconut Milk
1 Cup Water
1/2 Cup Rolled Oats
1 Cup Pineapple
2 Tablespoons Brown Sugar
1 Teaspoon Cinnamon

Combine liquids and oatmeal in the bowl of the blender.  Let sit for 5 minutes.  Add the remaining ingredients and blend until smooth.

Day 176 Strawberry Banana Oatmeal


Strawberry Banana Oatmeal

1 Cup Water
1/2 Cup Rolled Oats
1 Teaspoon Cinnamon
1 Tablespoon Brown Sugar
1 Cup Strawberries, sliced
1 Banana, sliced
Ingredients

Bring water to a boil and add oats and cinnamon.  Cook until thickened.  Add the brown sugar.  Mix and remove from heat.  Pour in a bowl and add the fruit.

Day 146 Almond Porridge


Almond Porridge

1 Cup Rolled Oats
1 Teaspoon Ground Cinnamon + a little to sprinkle over
1 Cup Soy Milk + 1/2 cup water
1/4 Cup Almonds, blanced and sliced
1 Tablespoon Maple Syrup

1. In a small to medium saucepan, simmer the oats and cinnamon in the soy
milk + water until thick and creamy, using a medium heat. Stir the oat mixture
frequently to avoid sticking to the bottom of the pan.

2. Once the oat mixture has thickened, remove from the heat and serve in a bowl
with the rest of the cinnamon, almonds and maple syrup, sprinkled
and drizzled over.

Day 142 Chocolate Oatmeal



Chocolate Oatmeal

1 cup rolled oats
2 tablespoon cocoa powder
1 1/2 cups coconut  milk (Day 137)
1 tbsp flaxseed, ground
1/2 cup frozen mixed berries
1 tablespoon maple syrup

Place oats and coconut milk in a saucepan.  Heat to boiling and reduce to a simmer.  After a few minutes add the cocoa and flaxseeds.  Cook for a few more minutes and add the frozen berries.  Cook until most of the liquid is absorbed.  Remove from the heat and add the maple syrup.

Day 139 Berry and Tahini Oats


Berry and Tahini Oats

1 cup rolled oats
1 cup coconut milk + 1/2 cup water (Day 137)
1/2 cup frozen mixed berries
1 tbsp tahini

Add the liquids and oats to a saucepan.  Bring to a boil, then reduce heat and simmer.  After 5 minutes add the berries and tahini.  Cook until the oats absorb the liquid.

Day 52 Overnight Oatmeal


Overnight Oatmeal

4 Cups Water
1 Cup Steel Cut Oats
1/3 Cup Dried Cranberries
1/3 Cup Dried Apricots, chopped
Ready to cover for the evening

Combine all of the ingredients in a small crockpot. cook 7 - 10 hours.  If you have a full size slow cooker, double the ingredients.
Good morning!

Do not use regular oats, they are too soft. This is a great way to use the steel cut oats, since they take so long to cook.  Breakfast is ready when you wake up.

Day 27 Oat Currant Scones


Oat Currant Scones

2 Tablespoons Earth Balance
1 1/4 Cup Rolled Oats
3/4 Cup All Purpose Flour
3/4 Cup Whole Wheat Pastry Flour
1/4 Sugar
1 Tablespoon Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Cup Currants
Equivalent of 1 Egg
1/2 Cup Plain Coconut Milk Yogurt
2 Tablespoons Safflower Seed Oil
Scone ingredients

1.  Preheat oven to 425 F.  Line a baking sheet with parchment paper.  Melt Earth Balance.
Dry ingredients

2.  Stir together oats, flours, sugar, baking powder and soda, and salt in a large bowl.  Stir in currants and make a well in the center.  Combine butter, egg replacement, yogurt and oil in a small bowl; add to dry ingredients, stirring until just moistened.
Wet ingredients

3.  Turn out on to a floured surface and gently knead several times to form a ball.  Place the ball on the baking sheet and cut into 8 wedges.

4. Bake until lightly browned, 15 to 20 minutes.  Transfer to a rack and cool.  Use a serrated knife to separate the slices.

New Stuff

Oatmeal
A trip to the grocery store means lots of new recipes to try.  I started with a crock pot oatmeal.  This is another way to cook the steel cut oats without a lot of work.  Before bedtime, the oats, frozen mixed vegetables, water, cinnamon, vanilla cashew milk and nutmeg are added to the pot.  In the morning, breakfast is ready.  The cashew milk was a new item, I had been wondering when I would see this product.  I have not tried alone, but  it worked well in the oatmeal.
Later in the morning I made a drink from soaked dates, maca powder, cinnamon, ice and water combined in the blender.  It tasted like what I would imagine date milk tasting.
Lunch was a large salad of spinach, very strong purple onion, soaked almonds, red pepper and mushrooms.  The dressing was made with lemon juice, dijon mustard, maple syrup, olive oil, garlic powder, pepper and hemp seeds.

For an afternoon snack, I made some raw cookie dough balls.  Walnuts, quinoa flakes, vanilla, and dates were combined in the food processor. Chopped chocolate chips were then mixed in.  The dough was rolled into balls and chilled in the refrigerator.

For dinner we had a Pesto Pasta.  The pesto was made with basil, garlic, cannellini beans, pine nuts, nutritional yeast, lemon and olive oil.  The pesto was served over brown rice spaghetti.  The beans made the pesto much richer than regular pesto.

A side salad rounded off the meal.  I mashed avocado and lemon juice together and topped spring mix with it.

Addicted to Results 4/26miner

Breakfast started out pretty basic - oatmeal with banana and a little bit of maple syrup.
For lunch I did a mix of two different leftovers - the fettuccine alfredo and the  garlic harticot verts.
For dinner, we went out with friends to Aida Bistro in Columbia.  They have wine on tap and serve it in 3 and 5 oz glasses.  I started with a pomegrante martini and we given french baquette slices and olive oil.  For my first course I had a beet salad.  This was shaved beets and arugula.  It also have goat cheese that was not listed on the menu so I had to pick the cheese out of the salad.  My first glass of wine was a gewurtaminer.
I forgot to take a pic of the salad.  The next course was a duo of spreads.  One was the black truffle hummus and the other was a dill cheese spread.  I gave the cheese spread to the table.  I was I had thought to ask for 2 hummus servings instead.  The hummus was nice, but not as rich as I was used to.  Also, I could not  taste the black truffle.

The main course was a quinoa and black bean casserole with corn and a tomato sauce.  Tommy ordered a bottle of Argyle sparkling for the table.
There was nothing on the dessert menu I could eat. I decided to go with a chocolate martini.  It was good, but the chocolate sauce appeared to be a chocolate cream sauce instead.  It was good and looks really  nice in the picture.
