Day 225 Ratatoiulle Casserole


Ratatoiulle Casserole

1 Carrot, cut in chunks
1 Eggplant, cut in chunks
1 Zucchini, cut in chunks
1 Yellow Squash, cut in chunks
2 Tomatoes, cut in chunks
1 Onion, cut in chunks
3 Cloves Garlic, minced
1 Can Kidney Beans
1 Cup Total Basil, Parsley, and Oregano, chopped
2 Cups Veggie Stock
2 Large Sweet Potatoes, baked and skin removed
2 Ounces Ground Flax Seeds
Salt and Pepper to taste
Potato layer

1.  Preheat over to 375 F.  Slice the potatoes lengthwise and line the bottom of a lasagna pan.  Top with the veggie chunks.
Veggie Layer

2.  Mix the garlic and herbs with the beans.  Layer on top of the veggies.  Pour the stock over the mix.   Sprinkle the flax seeds and salt and pepper over the beans.
Ready to bake

3.  Bake for 1 hour.
