Tofu with Peanut Sauce
5 Tablespoons Water
4 Tablespoons Smooth Natural Peanut Butter
1 Tablespoon Rice Vinegar
2 Teaspoons Soy Sauce
2 Teaspoons Honey
2 Teaspoons Ginger, minced
2 Cloves Garlic, minced
Add all ingredients together and blend with immersion blender.
14 Ounces Extra Firm Tofu, diced
2 Teaspoons Olive Oil
6 Ounces Baby Spinach
4 Ounces Mushrooms, sliced
1 Bunch Green Onions, sliced
1. Heat oil in large skillet over high heat. Add tofu and cook until browned.
2. Add remaining vegetables and cook until warm. Add the peanut sauce and heat through.
Goes well with Brown Rice
