Spinach and Olive Salad
Another simple recipe to accompany your meal.
3 Tablespoons Olive Oil
2 Tablespoons Raspberry Vinegar
1/4 Teaspoon Salt
Freshly Ground Pepper, to taste
1/2 Cup Kalamata Olives, pitted and sliced
6 Cups Baby Spinach Leaves
1/3 Cup Cucumber, sliced
1/2 Red Onion, thinly sliced and halved
Whisk the oil, vinegar, salt and pepper together. Add the salad ingredients and toss with the oil.
Goes well with Tofu
