Addicted to Results 5/7 and 5/8

5/7
Going all out lunch at breakfast - a vegan hot dog on a whole wheat bun the tomatilla avocado salsa and ketchup. I also had some tea and fruit plate at Atwater's.
Lunch was the Tofu Stir Fry, this time served over some barley that I had frozen a few weeks ago.
Dinner was some of the barley and the last of the tomato sauce that I had used with the eggplant sandwiches. I had tomato cucumber salad on the side.  The product below was called Citrus Vegan Spareribs.  They were made with a mix of soy protein and wheat gluten.  They would not remind you of spareribs in any way -maybe more like a type of chicken.  The nuggets were very chew and not very palatable.

Breakfast was my last orange. I ate it before going to gym.  When I got back, it was the last the vegan hot dogs.

For lunch, I mixed some leftovers together - the last of the sundried tomato risotto, some sauteed onions, and the corn and tomato mix.  They worked well together.
Veggie Pizza
We went to the Can Company for dinner.  On the 2nd Thursday of each month during the spring and summer, they have a band playing.  Last night was the Kelly Bell Band.  We started with a bottle of cremant and a veggie pizza at Chesapeake Wine Company.  No cheese on my half.
Tangerine Sorbet
I have not gone to Cold Stone Creamery in years because of my lactose intolerance.  On a whim I decided to check and see if that had sorbet or non dairy milk ice cream.  They had one sorbet, but it was a great flavor - tangerine.  Mine was mixed with black cherries and pecans.  We also made our way through a bag of potato chips.

Addicted to Results 5/4

The next couple of days are going to be a little be hectic, so I just listing my food the Addicted to Results challenge. Breakfast was the last of the Apple Banana Pancakes with pecans and maple syrup.  For a snack, I had a Banana Muffin right before leaving to see Richard II at the movie theater.

Landmark carries vegan desserts including this chocolate chip cookie that I split with Tommy.  I also brought in one of the granola bars from Atwater's to go with the green tea sold at the theater.  After the movie, we went to Wit and Wisdom for a mid day meal.  I had 2 glasses of wine and a Falafal Burger with fries.  This was a late lunch.  Later in the evening I had some of Shepherd's Pie and a cracker with some green pea hummus.

Addicted to Results 5/3

For breakfast I thought I would change up by pancakes a little bit.  Instead of syrup I used apple butter as a topping.

I was at the gym from 8:30 to 12:30 today, so I brought a lara bar as a snack.
Lunch was a repeat of the Eggplant Tomato Sauce Sandwich with the Cabbage Slaw on the side.  The weather was wonderful and during the mid afternoon we walked up the Annabell Lee's to sit outside and enjoy the weather.  I had a cocktail and we split a bottle of wine.  We also split a appetizer of polenta with a corn sauce.
Next came an order of very spicy sweet potato fries with a brown sugar sauce. This was early in the evening, so we skipped having a regular dinner.  Later in the evening I had a small bowl of the Shepherd's Pie.

Tea of the Day
Breakfast was a repeat of yesterday - Apple Pecan Pancakes with maple syrup.  Lunch was a partial repeat. I had the eggplant tomato sandwich but on a whole wheat hot dog bun this time.  The cabbage slaw was on the side.

For an afternoon snack I had a granola type bar from Atwater's.  It was made with chocolate, dried cherries, cranberries, sunflower seeds, sesame seeds, pumpkin seeds and maple rice syrup.  While there were a lot of good ingredients, on the whole it was not very good.

For dinner, I had a veggie burger on a whole wheat bun with tomatilla salsa and ketchup.  There was a salad made with spring mix, tomato, cucumber and ranch dressing.  I had a whole wheat skinny dippers cracker on the side.
Snacks for the day included a Apple Banana muffin and a skinny dippers cracker with Green Pea Hummus.

Apple Pecan Pancakes
Pancakes for breakfast!  This version used coconut oil, silken tofu, rice milk and apples. The texture was a little to spongy for me.  I have had better luck with pancakes by using a non vegan recipe then converting it. The recipes meant to be vegan always seem to have texture problems.  These were served with broken pecans and maple syrup.
For lunch I had a vegan sausage with tomatilla avocado salsa and ketchup.  Cabbage slaw was on the side.  Snacks during the day included a apple banana muffin and a seeded granola bar from Atwaters.  Yes, Atwaters is open in Canton now!
Lemon Garlic Asparagus
We had dinner at the Canton Waterfront Park.  It was the first of the First Thursdays concerts in the park.  Joan Osburn was the headliner.  Even though it rained during the middle act, it was a fun night.  I started out with a winter seasonal Woodchuck Cider.  As the night progressed, the lines to the beer tents were ridiculous, so I made a run to Chesapeake Wine Company for a rose.  For dinner we had Sundried Tomato Risotto and Lemon Garlic Asparagus in the park.  The risotto was made with short grain brown rice, onions, sundried tomatoes, basil and parsley.  The asparagus was roasted in the oven with the garlic, lemon, salt and pepper.

Tea of the Day
I don't think the tea actually helps with weight loss, but it is made with roobios which is one of my favorite non tea 'teas'.  It also has orange peel, carob and cinnamon. Breakfast was one the Apple Banana Muffins with apple butter, a fiji apple and the rest of the breakfast scramble sans tortilla.

Lunch was an Eggplant Sandwich with Tomato Sauce. The eggplant slices were dipped in milk and egg substitute and dredged in a mix of flour and breadcrumbs.  The slices were roasted in the oven until they were crunchy.  The Tomato Sauce was made by cooking a yellow onion in olive oil until the onion was very soft.  Then the onion was removed and peeled and seeded tomatoes were to the oil and cooked into a sauce.  Some basil, salt and pepper were added at the end.  I saved the onions and some were on the sandwich made from the last of the Black Pepper Roll.

Eggplant Sandwich
I made a simple side salad of spring mix greens, almonds and Tomatillo Avocado Salsa.

Dinner was a Tofu Stir Fry over Brown Rice.  The tofu was cooked in a mix of olive and sesame oil.  I added onion, sweet potato and carrot.  This was cooked until the tofu was crispy and the veggies were soft. I made a sauce from vegetable broth, soy sauce and rice starch.  The sauce was added with a mix of different mushrooms.  This was cooked until the sauce thickened and served over brown rice.
