Day 105 Green Beans with Caramelized Red Onions


Green Beans with Caramelized Red Onions

1 Tablespoon Avocado Oil
3 Medium Red Onions, cut inot 16 wedges
1 Pound Green Beans, trimmed
1/2 Vegetable Broth
1 Tablespoon Balsamic Vinegar
2 Teaspoons Brown Sugar
1/4 Teaspoon Salt
Ground Pepper to taste

1.  Heat oil in a large skillet over medium heat.  Add onions and cook, stirring occasionally, until golden, 10 -15 minutes.
Crisp tender green beans

2.  Meanwhile, bring a large pot of  salted water to a boil.  Add green beans and cook until crisp-tender.  Drain.
Caramelized red onions and sauce

3.  Add broth to the onions, cook for 5 minutes.  Stir in vinegar, sugar, salt and pepper.  Add the beans, cover and cook for 2 minutes.  Serve warm.

Goes well with stuff red peppers.

Day 70 Green Beans with Poppy Seed Dressing


Green Beans with Poppy Seed Dressing

1 Teaspoon Poppy Seeds
2 Tablespoons Olive Oil
1 Tablespoon Rice Wine Vinegar
1 Teaspoon Mustard
1/2 Teaspoon Honey
1 Shallot, minced
Salt and Pepper, to taste
1 Pound Green Beans
Toasting the poppy seeds

1.  Toast the poppy seeds in a small pan until fragrant, about 1 minute.  Transfer to a bowl.  Add oil, vinegar, mustard, honey, shallot, salt and pepper.  Whisk until blended.
Dressing

2.  Cook beans in a large pot of boiling water until just tender. Drain.  Add the beans to the dressing and toss to coat.

Goes well with Vegetable Polenta Bake

Day 36 Green Beans



Green Beans

This is a very simple presentation of green beans

1 Pound Fresh Green Beans, trimmed
8 Ounces Mushrooms, sliced
1 Red Onion, Sliced
1 Clove Garlic, minced
2 Tablespoons Canola Oil
Salt and Pepper

 Heat oil in large skillet.  Add onion and cook until translucent.  Add remaining ingredients.  Cook till warmed through. Green Beans should still be crisp. Salt and pepper to taste,

Goes well with Quesadilla

Day 19 Orange Infused Green Beans


This one is easy and incredibly tasty.

Orange Infused Green Beans

1 Pound Green Beans, trimmed
1 Red Bell Pepper, thinly sliced
1 Tablespoon, Olive Oil
Zest of 1 Orange
1/2 Teaspoon Salt
1/4 Teaspoon Crushed Red Pepper
Orange infusion

Pre heat oven to 450 F.  Add zest, salt and crushed red pepper to roasting pan. Mix.  Add the green beans and bell pepper. Toss to combine.  Spread evenly on the pan.  Roast the vegetables, turning halfway during cooking, until tender and slightly wilted, about 15 minutes.
Cook green beans

Goes well with Curried Cashew Burgers
