Day 348 Cranberry Sauce


Cranberry Sauce

1 Cup Cranberry Juice Cocktail
1 Tablespoon Arrowroot
1/3 Cup Sugar
3 Tablespoon Dark Rum
Cranberry juice

Combine juice and arrowroot in a small saucepan, stirring until arrowroot is blended.  Stir in sugar; cook over medium heat until sugar dissolves and mixture thickens.  Remove from heat and stir in rum.  Let sauce cool before serving.

Goes well over fruit salad.

Day 347 Cranberry Pineapple Rolls


Cranberry Pineapple Rolls

1 Package Yeast
1/4 Cup Warm Water
1/2 Cup Almond Milk
1/4 Cup Earth Balance
1 1/2 Tablespoons Sugar
1/2 Teaspoon Salt
Equivalent of 1 Egg*
3 Cups All Purpose Flour
3/4 Cup Brandied Cranberries (Day 345)
1/4 Cup Pineapple, finely chopped
Grated Rind of 1 Orange

*1 Tablespoon ground flaxseeds, 1 teaspoon baking powder, 1 teaspoon potato starch, 1 tablespoon canola oil, 3 tablespoons water - mixed

1.  Dissolve the yeast with the water in the bowl of a stand mixer.  Combine milk, Earth Balance, sugar and salt. Heat in the microwave until the Earth Balance melts.  Let cool to lukewarm and add to the yeast mixture with the egg equivalent.

2.  With the mixer running on a medium speed, add the flour a 1/2 cup at a time until it is mixed well and a soft dough forms.  Oil the bowl and let rise in a warm place for 1 hour.

3.  Roll the dough into 1/4 inch thickness.  Using a 1 1/4 in round cookie cutter, cut out small circles.  Grease two muffin tins.  Arrange 5 circles around the sides of a muffin cup and put one circle in the middle. Repeat to make 15 - 18 rolls.  Let rise in a warm place for 30 minutes.

4.  Combine the cranberries, pineapple and orange rind.  Spoon a small amount of the fruit into the middle of each rise roll, lightly punching down the middle of the roll.  Bake at 400 for 15 - 20 minutes.
Ready to bake

Day 345 Brandied Cranberries


Brandied Cranberries

4 Cup Fresh Cranberries
2 Cups Sugar
1/4 Cup Brandy

Place cranberries in a shallow baking dish.  Sprinkle with sugar.  Bake at 350 F for 30 minutes.  Remove from oven mix well.  Stir in brandy. Place in glass jars.  Chill.

Goes well as a garnish in cocktails.

Day 342 Orange Cranberry Chutney


Orange Cranberry Chutney

6 Oranges
12 Ounces Fresh Cranberries
3/4 Cup Raisins
2 Cups Sugar
1/4 Crystallized Ginger, chopped
1 Stick Cinnamon
1/4 Teaspoon Garlic Powder
1/2 Teaspoon Curry

1.  Remove the zest from 2 oranges in long strips.  You will need 1/4 cup. Chop the strips into 2 inch pieces.  Juice the oranges.  Peel the remaining 4 oranges and section.

2.  Combine all ingredients except orange sections in a Dutch oven.  Cook over medium heat until the sugar dissolves and the cranberries pop.  Cover and cook 10 more minutes.  Remove the cinnamon stick and add the orange sections.  Mix well.

3.  Pour into sterilized jars leaving an inch of headspace.  Cover with metal lids.

Goes well on toast.

Day 299 Herb Crackers


Herb Crackers

1 Cup All Purpose Flour
1 Cup Whole Wheat Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Sea Salt
1 Tablespoon Herbs de Provence
1/2 Teaspoon Garlic Powder
1/4 Cup Olive Oil
1/2 Cup Water

1.  Preheat oven to 350 F.  Combine the dry ingredients and mix well.  Drizzle in the olive oil and mix with a wooden spoon. Some lumps will form and the flour will look like cornmeal. Add the water and mix well to combine.The dough will not be smooth.

2. Gather the dough into a ball and divide it in half.  Place each half between sheets of parchment paper.  Roll the dough out as thin as you can.

3.  Place the dough and the lower piece of parchment paper on baking sheets.  Bake 30 minutes until the crackers are crisp and golden brown.

4.  Let cool for 10 minutes.  Break into crackers.

Day 76 Cranberry Almond Granola


Cranberry Almond Granola

2/3 Cup Frozen Unsweetened Apple Juice Concentrate
1/2 Cup Maple Syrup
1/3 Cup Canola Oil
1/4 Cup Packed Brown Sugar
1 Tablespoon Ground cinnamon
1/2 Teaspoon Salt
5 Cups Rolled Oats
1 Cup Wheat Germ
1 Cup Whole Almonds, coarsely chopped
1/2 Cup Sunflower Seeds
1 Cup Dried Cranberries

1. Preheat oven to 325 F.  Coat 2 large baking sheets with oil.

2.  Whisk apple juice, syrup, oil and brown sugar in a medium saucepan.  Bring to a simmer over medium heat, stirring occasionally. Remove from heat, add cinnamon and salt.
Dry ingredients

3.  Mix oats, wheat germ, almonds, sunflower seeds and cranberries in a large bowl.  Stir in juice mixture, toss to coat.  Spread the granola evenly on the prepared baking sheets.
Cooked granola

4.  Bake the granola for 15 minutes, stirring once.  If the baking sheets are on differently racks in the oven, switch positions.  Bake another 15 minutes.  Let cool completely before storing.

Goes well with strawberries and yogurt.
