Easy Whole Wheat Rolls
2 Packages Yeast
2 1/4 Cups Warm Water
1/4 Cup Shortening
2 Egg Equivalent*
1/2 Cup Sugar
2 Teaspoons Salt
3 Cups Whole Wheat Flour
2 1/2 Cups All Purpose Flour
1/4 Cup Butterless Butter, melted (Day 328)
*2 Tablespoons Ground Flaxseed, 2 Teaspoons Baking Powder, 2 Teaspoons Potato Starch, 2 Tablespoons Oil, 6 Tablespoons Water - mixed together
1. Dissolve yeast in the water in the bowl of a stand mixer. Let stand for 5 minutes. Add shortening, egg equivalent, sugar and salt. Beat at medium speed with a dough hook. Add flour a 1/2 Cup at a time until dough forms a ball.
2. Place dough in a well greased bowl. Cover and let rise in a warm place for 1 hour.
3. Punch dough down and divide in fourths. Divide each fourth into 12 strips. Roll each strip between your palms to make a ball. Place 2 inches apart on baking sheets lined with parchment paper.
4. Cover and let rise for 30 minutes. Brush with melted butter. Bake at 375 F for 15 - 20 minutes.
