Baking Powder Biscuits
2 Cups All Purpose Flour
4 Teaspoons Baking Powder
1/2 Teaspoon Salt
1/3 Cup Shortening
2/3 Cup Coconut Milk
Melted Earth Balance for glazing
The easy way to measure shortening - Measure milk into a measuring cup. Add shortening until the milk rises to the total measurement level. 2/3 Cup Milk plus 1/3 cut shortening = 1 cup |
1. Place flour, baking powder, salt and shortening in the bowl of a stand mixer. Using a flat beater, turn to stir and mix until the flour looks like coarse cornmeal. Add milk, continuing to stir until the dough comes together. Avoid over beating.
2. Turn dough onto lightly floured surface and knead until smooth. Roll to a 1/2 inch thickness. Cut with a 2 inch biscuit cutter.
3. Place biscuits on greased baking sheets and brush with melted Earth Balance. Bake at 450 F for 15 minutes or until golden.
Makes 12 -18 biscuits
