Day 290 Black Bean Soup


Black Bean Soup

2 Cups Dried Black Beans
1 Onion, diced
2 Carrots, peeled and diced
1 Bunch Green Onions, white and light green parts, sliced
4 Cloves Garlic, diced
1 Tablespoon Ground Cumin
1 Tablespoon Ground Coriander
1/2 Bunch Cilantro, chopped
1 Tablespoon Nutritional Yeast
1 Tablespoon Seaweed
Salt and Pepper to Taste
1 Cup Red Wine
2 Cups Veggie Stock
Avocado for garnish

1.  Cook the beans in a large pot of salted water until tender.  Drain, reserving 2 cups of the bean stock.

2.  Return the beans to the pan with the bean stock, veggie stock and red wine.  Add the onions, carrots, garlic, cumin, coriander, nutritional yeast and seaweed.  Cook until the vegetables are tender.  Add the green onions and cilantro and cook for 10 more minutes.  Add salt and pepper. Garnish with the avocado.

Pairs well with 2001 Alban Vineyards Grenache (not used for cooking)

Day 240 Raspberry Blackberry Pie


Raspberry Blackberry Pie

1 Recipe Cream Cheese Pastry Crust (Day239)
2 Pints Blackberries
1 Pint Raspberries
2 Plums, sliced
4 Tablespoons Sugar
2 Tablespoons Tapioca

1.  Roll out the dough to fit a pie plate.  Save scraps for decorative garnish on pie.
Ready to bake

2.  Preheat the oven to 400 F.  Put the fruit in a bowl and add the sugar and tapioca.  Toss well.  Pour the fruit  into the pie plate.  Use a cookie cutter to make decorative crust designs or make strips for a criss cross design.  Place on top of the fruit.  Cook for 1 hour.

Goes well with Coconut Milk Ice Cream

Day 136 Blackberry Crisp


Blackberry Crisp

The Fruit
4 Cups Blackberries
1 Tablespoon Flour
3 Tablespoons Brown Sugar
Rind of 1 Orange, grated

Preheat oven to 375F.  Toss the berries with the flour, sugar and orange rind.  Place them in a glass pie pan.  Prepare the topping and distribute over the berries.  Bake 30 -40 minutes.

The Topping

1/2 Cup White Flour
6 Tablespoons Brown Sugar
1/4 Teaspoon Cinnamon
1/8 Teaspoon Nutmeg
1/8 Teaspoon Salt
4 Tablespoons Earth Balance

Combine all of the dry ingredients.  Cut the Earth Balance into small pieces.  Work it into the flour with a pastry cutter and/or your fingers until well distributed.
