Day 344 Roasted Pepper Broccoli


Roasted Pepper Broccoli

3 Pounds Broccoli, cut into flowerets
1 Bunch Green Onions, chopped
1/2 Cup Earth Balance
1 Cup Roasted Red Peppers, chopped
1 1/2 Teaspoons Lemon Zest
1/2 Cup Lemon Juice
1/2 Teaspoon Salt
1/4 Teaspoon Pepper

1.  Steam broccoli in a small amount of boiling water until tender crisp. about 10 - 15 minutes.
Sauce ingredients

2.  Saute green onions in Earth Balance in a saucepan until tender.  Stir in peppers, zest, juice, salt and pepper.  Simmer 5 minutes.
Roasted pepper sauce

3.  Drain broccoli.  Pour sauce over.

Day 325 Cheesy Soup with Broccoli


Cheesy Soup with Broccoli

2 Tablespoons Earth Balance
1/2 Pound Vegan Kielbasa. cubed
1 Onion, chopped
1/2 Teaspoon Caraway Seed
Pepper to taste
1 Bay Leaf
28 Ounces Veggie Broth
1 Russet Potato, peeled and diced
1 1/2 Cup Broccoli, chopped
1 1/2 Cups Cauliflower, chopped
1/4 Cup Soy Milk
1 1/2 Cups Daiya Cheddar, shredded
Ingredients

1. In a soup pot, place Earth Balance, sausage, onion, caraway seed, pepper and bay leaf.  Cook until sausage is browned and onion is tender.

2.  Add stock, potatoes, broccoli and cauliflower. Cook until veggies are soft.
Before adding the cheese

3.  Stir in milk and cheese and cook until cheese is melted.  Discard bay leaf.

Day 158 Cheesy Broccoli Baked Potato


Cheesy Broccoli Baked Potato

4 Large Potatoes, baked or microwaved
6 Cups Broccoli, cut in bite sized pieces

Cheesy Mix
1 Cup Raw Cashews
1 1/4 Cups Nutritional Yeast
1/2 Rolled Oats
1/4 Cup Arrowroot
1 Tablespoon Salt
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1/2 Teaspoon Ground Turmeric
Dry cheesy mix

1. Place all of the ingredients for the cheesy mix in a food processor.  Blend until a fine powder.
Cooked cheesy sauce

2.  Steam the broccoli until bright green and tender.

3.  Place 1 cup of the cheesy mix with 2 cups of water in a small pot. (If making more or less, it is a 2:1 ratio, water to mix).  Heat to medium.  Whisk often, cooking until thickened.

4.  To assemble, place the bake potatoes on plates and mash or crush.  Top with broccoli then pour the sauce over.

Day 66 Broccoli Slaw


Broccoli Slaw

4 Slices Tempeh Bacon
1 Large Head of Broccoli
1 Large Carrot, peeled
6 Ounces Coconut Milk Yogurt
1/4 Cup Just Mayo
3 Tablespoons Cider Vinegar
2 Teaspoons Sugar
1/2 Teaspoon Salt
Freshly Ground Pepper, to taste
8 Ounces Chopped Water Chestnuts
1/2 Red Onion, finely diced

1.  Cook tempeh in the microwave or a skillet until crisp. Chop coarsely.

2.  Slice the broccoli with a thin slicing disc in a food processor.  Slice or grate the carrot.
Dressing

3.  Whisk yogurt, mayo, vinegar, salt and pepper in a small bowl.  Mix the broccoli, carrot, tempeh, water chestnuts and onion.  Pour the dressing over and mix well.  Chill until serving time.

Goes well with sandwiches.
