Day 60 Focaccia


Day 60 Focaccia

5 Cups All Purpose Flour
1 Tablespoon Fresh Thyme
1 Tablespoon Dried Basil
1 Tablespoon Fresh Rosemary, chopped
2 Teaspoons Sea Salt
1 Teaspoon Active Dry Yeast
2 1/3 Cups Water
1/3 Cup Olive Oil, plus more for drizzling

1. Combine the dry ingredients and herbs in a large bowl.  Make a well in the center of the flour mixture and pour in the water and the oil.  Mix to make a sticky dough.  Cover with a towel and leave on the counter for 12cto 24 hours.

2. Grease a sheet pan or lasagna pan with oil.  Roll and stretch the dough out to cover the pan with a uniform thickness. Let the dough rise for 2 hours.

3.  Preheat the oven to 350 F.  Poke holes in the dough with the handle of a wooden spoon.  Drizzle olive oil over the dough.  Bake for 40 minutes.
