Asparagus Stock
The lower ends of a pound of Asparagus
Greens of two Leeks
1 Bay Leaf
1 Carrot, peeled and chopped
1 Celery Stalk, chopped
4 Parsley Branches
1/2 Teaspoon Salt
8 Cups Water
Combine all the ingredients in a large pot and bring to a boil. Reduce heat and simmer 30 minutes. Strain.
Use for Asparagus Soup.
